
If you happen to find fresh chickpeas in pods as I did recently, this is a good way to prepare them. Be forewarned that shelling these peas is a bit tedious, so grab a comfy chair and a couple of bowls before starting.
Makes about 1 1/2 cups.
Ingredients:
- 10-12 oz chickpeas in pods
 - 1 Tbsp olive oil
 - 1/8 tsp oregano
 - 1/8 tsp garlic powder
 - 1/8 tsp salt
 - 1/8 tsp pepper
 - lemon slices
 
Directions:
- Remove shells from chickpeas.
 - In large skillet over medium heat, warm olive oil
 - Add shelled chickpeas.
 - Saute 3 minutes. Add oregano, garlic, salt and pepper.
 - Saute another 3 minutes, or until tender.
 - Serve with lemon slices.
