Fresh Chickpeas in Pods

If you happen to find fresh chickpeas in pods as I did recently, this is a good way to prepare them. Be forewarned that shelling these peas is a bit tedious, so grab a comfy chair and a couple of bowls before starting.

Makes about 1 1/2 cups.

Ingredients:

  • 10-12 oz chickpeas in pods
  • 1 Tbsp olive oil
  • 1/8 tsp oregano
  • 1/8 tsp garlic powder
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • lemon slices

Directions:

  1. Remove shells from chickpeas.
  2. In large skillet over medium heat, warm olive oil
  3. Add shelled chickpeas.
  4. Saute 3 minutes. Add oregano, garlic, salt and pepper.
  5. Saute another 3 minutes, or until tender.
  6. Serve with lemon slices.
