
These easy sandwiches will require two large skillets. Ready in a few minutes, they are satisfying and delicious!
Serves 2.
Ingredients:
- 1 1/2 Tbsp vegetable oil
- 4 small bell peppers, cored, cut in small pieces
- 2 Tbsp butter
- 4 slices whole grain bread
- 1 c shredded melting cheese
- 2 small tomatoes, thinly sliced
- dash salt
- dash pepper
Directions:
- In one large skillet, warm vegetable oil on low.
- Add peppers; sprinkle lightly with salt and pepper; cook until lightly browned and tender on all sides.
- Remove peppers to holding plate. Carefully wipe skillet with paper towel; set back on unheated burner.
- Place another large skillet on another burner.
- Butter one side of each of the four slices of bread. Place face down in the two skillets.
- Place 1/4 cup of shredded cheese evenly on each bread slice, followed by slices of tomato. Sprinkle with salt and pepper.
- Turn both burners on low and cover skillets with lids. Cook several minutes, or until bread is browned on bottom and cheese is melted.
- Place two open-faced sandwiches on each of two plates and add peppers to top. Serve immediately.
