
Purple sweet potatoes are less sweet than the orange ones, and are so delicious with this simple glaze. Be sure to line your pan with parchment or foil though, as otherwise the glaze tends to stick to the pan.
Serves 3-4.
Ingredients:
- 2 medium purple sweet potatoes, peeled, cut in bite-sized pieces
- 1 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 Tbsp maple syrup
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/2 tsp minced fresh rosemary
Directions:
- Preheat oven to 400 degrees F. and line a baking sheet with parchment or foil.
- In a large bowl, mix sweet potatoes with the olive oil, lemon juice, maple syrup, salt, pepper, and rosemary. Stir well to coat everything.
- Place the purple sweet potatoes in a single layer on the lined baking sheet.
- Bake 15 minutes. Remove from oven; turn sweet potatoes over.
- Place back in oven for another 10 minutes, or until fork tender.
- Place on serving plate and garnish with lemon slices and/or rosemary sprigs.
