Fresh Fig Jam

This refrigerator jam is easy to make and tastes delicious. No pectin or other thickener is required.

Makes about 1 pint.

Ingredients:

  • 28 oz fresh ripe figs
  • 1 1/4 c granulated sugar
  • 1 Tbsp lemon zest
  • 1/4 c fresh lemon juice
  • 1/2 c water

Directions:

  1. Remove stems from figs; chop figs coarsely. Place in 2-quart or larger pot.
  2. Add sugar, lemon zest, lemon juice, and water.
  3. Bring to boil on medium heat.
  4. Reduce heat; simmer 40 minutes, stirring often.
  5. Mash figs with potato masher.
  6. Perform saucer test to see if jam is thick enough: Place saucer in freezer 5 minutes. Place small spoonful of jam on saucer. Run finger through jam. If it stays parted, the jam is thick enough. If not, continue to simmer a few more minutes; repeat test.
  7. Set aside; allow to cool. Pour jam in clean pint jar; seal tightly.
  8. Cool completely before refrigerating. Use within a month or so.
