Crunchy Walnut Cookies

These lovely cookies require no eggs. The little bit of chia seed holds them together and keeps them crisp. Quick and easy to make, your family will love them.

Makes 1 dozen medium cookies.

Ingredients:

  • 2/3 c brown sugar
  • 1/2 c salted butter, softened
  • 1 Tbsp lemon juice
  • 1 tsp vanilla
  • 2 tsp chia seeds
  • 1/3 c whole wheat flour
  • 2/3 c all purpose flour
  • 1/2 tsp baking soda
  • 1 c chopped walnuts

Directions:

  1. Preheat oven to 325 degrees F. Butter large sheet pan(s).
  2. In medium bowl, cream brown sugar and butter.
  3. In small bowl, using a fork, beat chia seeds in vanilla and lemon juice for 2-3 minutes. Add to medium bowl; blend well.
  4. Sift in the whole wheat flour, all purpose flour, and baking soda. Blend together.
  5. Fold in walnuts.
  6. On prepared baking sheet(s), drop batter by rounded tablespoons 1.5 inches apart.
  7. Bake 10 minutes or until firm. Transfer to wire rack until cool.
