
These lovely cookies require no eggs. The little bit of chia seed holds them together and keeps them crisp. Quick and easy to make, your family will love them.
Makes 1 dozen medium cookies.
Ingredients:
- 2/3 c brown sugar
- 1/2 c salted butter, softened
- 1 Tbsp lemon juice
- 1 tsp vanilla
- 2 tsp chia seeds
- 1/3 c whole wheat flour
- 2/3 c all purpose flour
- 1/2 tsp baking soda
- 1 c chopped walnuts
Directions:
- Preheat oven to 325 degrees F. Butter large sheet pan(s).
- In medium bowl, cream brown sugar and butter.
- In small bowl, using a fork, beat chia seeds in vanilla and lemon juice for 2-3 minutes. Add to medium bowl; blend well.
- Sift in the whole wheat flour, all purpose flour, and baking soda. Blend together.
- Fold in walnuts.
- On prepared baking sheet(s), drop batter by rounded tablespoons 1.5 inches apart.
- Bake 10 minutes or until firm. Transfer to wire rack until cool.
