Soy Nut Chow Mein

Soy nuts are made from soybeans soaked in water, drained, and then baked or roasted. Packages of these high protein crunchy treats can be found in many health food stores. Look for the non-GMO variety for best results. Soy Nut Chow Mein

Serves 2-3


  • 1 tsp toasted sesame seed oil
  • 1 stalk celery, cut in 1/3 inch diagonal slices
  • 1 small onion, sliced in half-circles or wedges
  • 1-15 oz can stir fry vegetables, rinsed and drained
  • 1 c hot vegetable broth
  • 1 Tbsp brown sugar
  • 1 Tbsp fresh parsley, minced
  • 1 1/2 tsp soy sauce
  • 1/2 tsp paprika
  • 1 Tbsp cornstarch
  • 1/4 c roasted soy nuts
  • 3 c (6 oz) fried chow mein noodles
  • 1 green onion, thinly sliced


  1. In a heavy, medium pot over medium heat, warm the oil and saute the celery and onions 1 minute.
  2. Add stir fry vegetables; saute another minute.
  3. In a medium bowl, whisk together the vegetable broth, brown sugar, parsley, soy sauce, and paprika; add to pot and stir.
  4. In a small bowl, dissolve cornstarch in 1/4 cup water. Whisk this slurry into the pot and bring to a simmer, stirring constantly until thickened. Reduce heat to low and simmer 2-3 minutes.
  5. Place on a bed of Chinese fried noodles. Sprinkle with green onions and serve hot as is, or with steamed rice.
