This is a creamy dressing that is relatively low in fat and calories, yet tastes very rich and delicious.
Makes about 1 cup.
Ingredients:
- 1/4 c buttermilk
- 1/4 c cottage cheese
- 1/4 c mayonnaise
- 2 Tbsp lemon juice
- 1 Tbsp white vinegar
- 1/2 tsp dry dill
- 1/2 tsp dry parsley
- 1/2 tsp sea salt
- 1/8 tsp black pepper
Directions:
- Place all ingredients in a blender, small kitchen chopper, or food processor. Process until very creamy and smooth. If desired, add a few teaspoons of water and process until the consistency is runnier.
- Store in a tightly sealed bottle, cruet or refrigerator jar. Chill until served. Pour over green salads or serve with vegetable sticks as a dip. Use within a few days.
