
Serves 2.
Ingredients:
- 4 slices bread
- 1 Tbsp vegetable oil
- 1/4 c green onion tops, sliced
- 1 Tbsp jalapeno pepper, minced
- 6 oz silken tofu, well-drained
- 1 tsp chili powder
- scant 1/2 tsp salt
- 1/4 c shredded Mexican blend cheese
- 1 small avocado, sliced
Directions:
- Toast bread until golden. Set aside.
- Heat oil in skillet.
- Add green onion and jalapenos. Saute 2 minutes.
- Crumble tofu into the skillet.
- Add chili powder and salt. Mix well; saute another 3 minutes.
- Stir in cheese. Remove from heat and mix well
- Spoon tofu mixture evenly on the toast.
- Arrange avocado slices on top. Serve with fruit on the side.
