
Dry bean curd is a great vegetarian protein source to have on hand. It comes in many shapes and sizes, but I have used the sticks to make this recipe more like a pasta dish. This may work out well for a Keto diet, though you may have to substitute another thickener for the flour.
Serves 1-2.
Ingredients:
- 2-3 oz dry bean curd sticks
- 1 Tbsp butter
- 1 Tbsp all purpose flour
- 1/2 c milk
- 1/2 c shredded cheddar cheese
Directions:
- Place dry bean curd strips in a bowl and cover with water. Soak 2 hours or more. Drain and set aside.
- In medium saucepan, melt butter over medium heat. Stir in flour.
- Continue stirring one minute.
- Gradually add milk, stirring until smooth; continue stirring another minute to eliminate raw flour taste.
- Add cheese and stir until melted.
- Gently stir in bean curd strips and cook until heated through.
- Serve hot sprinkled with minced parsley.
