Vegetable Diet Soup

This is the soup I turn to when I’m on a diet or fast. It is so low in calories and high in nutrition that you can have a great bowl of it and feel satisfied.

Makes about 2 quarts.

Ingredients:

  • 1 1/2 tsp olive oil
  • 1/2 c celery, chopped
  • 1/2 c onion, chopped
  • 1/2 c carrot, chopped
  • 1/2 c bell pepper (any color), chopped
  • 1-2 cloves garlic, minced
  • 1 1/2 c fresh tomato, chopped
  • 2 c cabbage, chopped
  • 2 c vegetarian chicken-style broth/consomme
  • 1/2 c marinara sauce
  • pinch oregano
  • pinch basil
  • dash red pepper flakes

Directions:

  1. In large pot over medium low heat, warm olive oil.
  2. Add celery, onion, carrot, and bell pepper. Sauté 3 minutes.
  3. Add garlic; sauté another 30 seconds.
  4. Add tomatoes, cabbage, broth, marinara sauce, oregano, basil and red pepper flakes.
  5. Bring to simmer.
  6. Partially cover, reduce heat to low, and simmer 20 minutes.
  7. Taste for salt and pepper level. Serve hot.
