
This is the soup I turn to when I’m on a diet or fast. It is so low in calories and high in nutrition that you can have a great bowl of it and feel satisfied.
Makes about 2 quarts.
Ingredients:
- 1 1/2 tsp olive oil
- 1/2 c celery, chopped
- 1/2 c onion, chopped
- 1/2 c carrot, chopped
- 1/2 c bell pepper (any color), chopped
- 1-2 cloves garlic, minced
- 1 1/2 c fresh tomato, chopped
- 2 c cabbage, chopped
- 2 c vegetarian chicken-style broth/consomme
- 1/2 c marinara sauce
- pinch oregano
- pinch basil
- dash red pepper flakes
Directions:
- In large pot over medium low heat, warm olive oil.
- Add celery, onion, carrot, and bell pepper. Sauté 3 minutes.
- Add garlic; sauté another 30 seconds.
- Add tomatoes, cabbage, broth, marinara sauce, oregano, basil and red pepper flakes.
- Bring to simmer.
- Partially cover, reduce heat to low, and simmer 20 minutes.
- Taste for salt and pepper level. Serve hot.
