This is an easy, spicy dish that is perfect with soba noodles or steamed rice.
Serves 2-3.
Ingredients:
- 12 oz extra firm tofu (sprouted tofu is best here)
- 1/4 c water
- 1/4 c apple juice
- 1 Tbsp olive oil
- 1 Tbsp molasses
- 1 Tbsp ketchup
- 1 Tbsp apple cider vinegar
- 1 Tbsp soy sauce
- 1 Tbsp brown sugar
- 1/4 tsp garlic powder
- 1/4 tsp ginger powder
- 1/4 tsp red pepper flakes
- 1 Tbsp sesame seeds (garnish)
Directions:
- Rinse the tofu and pat it dry. Cut into half-inch cubes and set aside on clean towel to absorb any liquid.
- In a small skillet or heavy pot, mix the sauce ingredients: water, apple juice, olive oil, molasses, ketchup, vinegar, soy sauce, brown sugar, garlic powder, ginger powder and red pepper flakes. Add the tofu and place on medium heat. Bring to a simmer.
- Reduce heat to low and simmer, stirring frequently, until all the liquid is absorbed into the tofu (about 20 minutes). Serve hot over steamed rice or soba noodles with a sprinkling of sesame seeds.
