My stove has been ‘on the fritz’ lately, but I found I could make a tasty stew in my rice cooker. My cooker is a small Aroma model, but I think this recipe would work in many other models.
Makes about one quart.
Ingredients:
- 1 Tbsp butter
- 1 Tbsp olive oil
- 1 medium onion, chopped
- 2 medium carrots, peeled, sliced
- 2 cloves garlic, minced
- 1 c beef-style vegetarian broth
- 2 medium potatoes, peeled, cup in 1/2 inch pieces
- 1 (12.3 oz) can unMeat Roast Beef style with its gravy
- 1 Tbsp fresh minced parsley
- 1 tsp dry thyme
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp Marmite yeast extract (optional)
Directions:
- Plug rice cooker in, then press button to “cook” mode, Warm one minute.
- Add butter and oil. When butter is melted, add onions and carrots. Saute 10 minutes.
- Add garlic; saute another minute.
- Pour in the broth. Add potatoes, unMeat with gravy, parsley, thyme, salt, pepper, and Marmite.
- Stir well. Cover and bring to boil. Cook 20 minutes, stirring midway to keep the bottom from sticking.
- Unplug and allow to stand, covered, for 5-10 minutes before serving. Great with bread and salad!
