Vegetarian Beef Stew in the Rice Cooker

My stove has been ‘on the fritz’ lately, but I found I could make a tasty stew in my rice cooker. My cooker is a small Aroma model, but I think this recipe would work in many other models.

Makes about one quart.

Ingredients:

  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, peeled, sliced
  • 2 cloves garlic, minced
  • 1 c beef-style vegetarian broth
  • 2 medium potatoes, peeled, cup in 1/2 inch pieces
  • 1 (12.3 oz) can unMeat Roast Beef style with its gravy
  • 1 Tbsp fresh minced parsley
  • 1 tsp dry thyme
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp Marmite yeast extract (optional)

Directions:

  1. Plug rice cooker in, then press button to “cook” mode, Warm one minute.
  2. Add butter and oil. When butter is melted, add onions and carrots. Saute 10 minutes.
  3. Add garlic; saute another minute.
  4. Pour in the broth. Add potatoes, unMeat with gravy, parsley, thyme, salt, pepper, and Marmite.
  5. Stir well. Cover and bring to boil. Cook 20 minutes, stirring midway to keep the bottom from sticking.
  6. Unplug and allow to stand, covered, for 5-10 minutes before serving. Great with bread and salad!
