Mustard Green Squares

This is a high protein, low carbohydrate, keto friendly dish. It is great hot or cold and makes a light summer meal.

Serves 4.


  • 6 large eggs
  • 1 1/2 c cottage cheese
  • 1 Tbsp fresh mint, minced (or 1 tsp dry mint)
  • 1 Tbsp fresh basil, minced (or 1 tsp dry basil)
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 c finely chopped mustard greens (large stems removed)


  1. In a 2-quart or larger pot, boil a quart of water.
  2. Add mustard greens. Stir and bring back to boil. Cook 5 minutes, or until tender.
  3. Drain well. Cool until safe to handle. Squeeze out all the water until nearly dry. Set aside.
  4. Preheat oven to 375 degrees F and generously butter an 8 x 8 x 2″ baking dish.
  5. In a large bowl, whisk the eggs well.
  6. Add cottage cheese, mint, basil, salt and pepper. Mix well.
  7. Fold in the mustard greens until evenly distributed.
  8. Spread mixture in the prepared baking dish; bake 25 minutes, or until lightly browned and firm on top.
  9. Cut into 4 squares and serve hot or cold.
