Cauliflower Pea Casserole

This humble dish is comforting and very low in calories. Best of all, it is an easy one-dish meal that is full of vitamins and minerals.

Serves 4.


  • 1/2 medium head of cauliflower
  • 2 ribs of celery, chopped
  • 1/2 c green onions, sliced
  • 1 (15 oz) can peas with packing liquid
  • 1 (10 oz) can condensed cream of celery soup
  • 1/2 tsp savory
  • 1/2 tsp salt (less if using salted peas)
  • 1/4 tsp pepper
  • 1 Tbsp butter or margarine


  1. Preheat oven to 375 degrees F.
  2. Cut cauliflower into small florets and pieces.
  3. In a large bowl, place the cauliflower, celery, green onions, peas with their liquid, condensed soup, savory. salt and pepper. Blend well.
  4. Pour mixture into a 2-quart casserole dish. Dot with butter.
  5. Cover with lid or foil.
  6. Bake 50 minutes. Set aside, covered, for 15 minutes. Serve in bowls with bread, or pour over rice or baked potatoes.
