This humble dish is comforting and very low in calories. Best of all, it is an easy one-dish meal that is full of vitamins and minerals.
Serves 4.
Ingredients:
- 1/2 medium head of cauliflower
- 2 ribs of celery, chopped
- 1/2 c green onions, sliced
- 1 (15 oz) can peas with packing liquid
- 1 (10 oz) can condensed cream of celery soup
- 1/2 tsp savory
- 1/2 tsp salt (less if using salted peas)
- 1/4 tsp pepper
- 1 Tbsp butter or margarine
Directions:
- Preheat oven to 375 degrees F.
- Cut cauliflower into small florets and pieces.
- In a large bowl, place the cauliflower, celery, green onions, peas with their liquid, condensed soup, savory. salt and pepper. Blend well.
- Pour mixture into a 2-quart casserole dish. Dot with butter.
- Cover with lid or foil.
- Bake 50 minutes. Set aside, covered, for 15 minutes. Serve in bowls with bread, or pour over rice or baked potatoes.
