This easy meatless dish is satisfying and flavorful. Serve it over brown rice for a light dinner.
Serves 2-4.
Ingredients:
- 1 Tbsp butter
- 1/2 medium onion, chopped
- 6 green onions, sliced
- 8 oz mushrooms, sliced
- 1 c vegetarian chicken style broth (divided use)
- 1/2 Tbsp paprika
- 1/4 tsp salt
- 1/2 Tbsp all purpose flour
- 2-4 c cooked brown rice
Directions:
- In a large skillet over medium heat, melt the butter. Add onions and green onions; saute them 5 minutes.
- Stir in mushrooms; saute another 5 minutes.
- Into 1/4 cup of the broth, whisk the flour until dissolved fully. Add to the skillet and stir until blended.
- Pour in remaining broth, paprika, and salt. Stir well and heat another 2 minutes.
- Serve over hot brown rice and sprinkle with minced fresh parsley if desired.
