Hungarian Mushrooms

This easy meatless dish is satisfying and flavorful. Serve it over brown rice for a light dinner.

Serves 2-4.


  • 1 Tbsp butter
  • 1/2 medium onion, chopped
  • 6 green onions, sliced
  • 8 oz mushrooms, sliced
  • 1 c vegetarian chicken style broth (divided use)
  • 1/2 Tbsp paprika
  • 1/4 tsp salt
  • 1/2 Tbsp all purpose flour
  • 2-4 c cooked brown rice


  1. In a large skillet over medium heat, melt the butter. Add onions and green onions; saute them 5 minutes.
  2. Stir in mushrooms; saute another 5 minutes.
  3. Into 1/4 cup of the broth, whisk the flour until dissolved fully. Add to the skillet and stir until blended.
  4. Pour in remaining broth, paprika, and salt. Stir well and heat another 2 minutes.
  5. Serve over hot brown rice and sprinkle with minced fresh parsley if desired.
