Candied Butternut Squash

Serves 4.


  • 4 c butternut squash, peeled, cubed
  • 3 Tbsp maple syrup or pancake syrup
  • 3 Tbsp ketchup
  • 1 1/2 Tbsp olive oil


  1. Preheat oven to 400 degrees F and line a 13 x 9 x 2 inch baking dish with parchment paper.
  2. In a large bowl, blend together the maple syrup, ketchup and olive oil. Add the squash and toss until well-coated. Place the squash in the prepared baking dish in a single layer.
  3. Bake 25 minutes, or until tender. Serve hot.
