Creole Soy Nuts

Soy nuts are roasted soy beans, and they make a tasty, crunchy high-protein snack. Pack them in your children’s lunch boxes or serve them as a nutritious snack.

Makes about 3 cups.

Ingredients:

  • 1 (15 oz) can or 2 c home-cooked soybeans
  • 1 tsp Creole seasoning
  • 2 tsp vegetable oil

Directions:

  1. Preheat oven to 350 degrees F. Line a baking sheet with foil, dull side up.
  2. Rinse beans and drain well.
  3. Place beans on prepared baking sheet.
  4. Sprinkle with oil and seasoning. Use clean hands to toss the beans in oil and spices until coated on all sides.
  5. Spread out in single layer.
  6. Cook 15 minutes; stir and turn soybeans; cook another 10-15 minutes, or until crisp and browned. (Be careful not to over-brown them.) Cool before serving.
