Soy nuts are roasted soy beans, and they make a tasty, crunchy high-protein snack. Pack them in your children’s lunch boxes or serve them as a nutritious snack.
Makes about 3 cups.
Ingredients:
- 1 (15 oz) can or 2 c home-cooked soybeans
- 1 tsp Creole seasoning
- 2 tsp vegetable oil
Directions:
- Preheat oven to 350 degrees F. Line a baking sheet with foil, dull side up.
- Rinse beans and drain well.
- Place beans on prepared baking sheet.
- Sprinkle with oil and seasoning. Use clean hands to toss the beans in oil and spices until coated on all sides.
- Spread out in single layer.
- Cook 15 minutes; stir and turn soybeans; cook another 10-15 minutes, or until crisp and browned. (Be careful not to over-brown them.) Cool before serving.
