This is a low calorie way to make pasta salad, with plenty of vegetables, no added oils, and high protein cottage cheese. It’s creamy and delicious too.
Serves 4-5
Ingredients:
- 1 c uncooked ziti pasta
- 1 large carrot, peeled, thinly sliced
- 1 c frozen peas
- 2 plum tomatoes, de-seeded, chopped
- 1 1/2 c cottage cheese
- 1 Tbsp fresh parsley, minced
- 1 green onion, thinly sliced
- 1/2 tsp dried dill
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp dried basil
- 1/4 tsp salt
- 1/4 tsp pepper
Directions:
- Boil about 3 cups lightly salted water. Drop in the ziti, carrots, and frozen peas; bring back to boil. Stir, and reduce heat slightly. Cook about 7 minutes, or until just tender. Rinse under cold water, drain thoroughly.
- In a large bowl, mix the tomatoes, cottage cheese, parsley, green onion, dill, garlic powder, onion powder, basil, salt and pepper well.
- Fold in the ziti, carrots and peas and mix well. Refrigerate until well chilled for best taste.
