Vegetarianism can be a way to maintain dietary nutrition while saving dollars. Admittedly, it is not always so. If we choose to purchase costly convenience products, even though they contain good ingredients, they will strain the budget. I find that using dried legumes, textured soy protein, tofu, whole grains, homemade yogurt and bread, and growing my own little vegetable and herb garden can cut my expenses considerably. In 2016, as prices go up in our local markets, let’s resolve to keep a truly healthy, truly low-cost vegetarian diet!
