I bake this bulgur alongside my Roasted Stuffed Eggplant dish and serve them together. The flavors blend beautifully.
- 1 c coarse #4 bulgur wheat
- 2 c water
- 1 Tbsp olive oil
- 1/2 Tbsp dry parsley or dehydrated greens
- 1/2 tsp ground fenugreek or oregano
- 1/4 tsp salt
- 1/8 tsp ground black pepper
- Preheat oven to 375 degrees F.
- Place all ingredients in a 1-quart baking dish and stir well.
- Cover tightly and bake 45 minutes. Fluff with a fork and serve.
