Oven Baked Bulgur

Oven Baked BulgurI bake this bulgur alongside my Roasted Stuffed Eggplant dish and serve them together. The flavors blend beautifully.

Serves 2-4.


  • 1 c coarse #4 bulgur wheat
  • 2 c water
  • 1 Tbsp olive oil
  • 1/2 Tbsp dry parsley or dehydrated greens
  • 1/2 tsp ground fenugreek or oregano
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper


  1. Preheat oven to 375 degrees F.
  2. Place all ingredients in a 1-quart baking dish and stir well.
  3. Cover tightly and bake 45 minutes. Fluff with a fork and serve.
