These barbecued bean patties can be made with any creamy bean such as pintos, cranberry beans or Great Northerns. They go especially well with potato salad, or can be served on a bun with all the trimmings.
Makes 7-8 patties.
Ingredients:
- 1 1/2 c Peruano beans
- 1/2 c cracker meal
- 4-5 green onions, sliced
- 3 Tbsp parsley, minced
- 2 cloves garlic, minced
- 1-2 Tbsp bacon-flavored soy bits
- 3 Tbsp barbecue sauce
- 1 tsp prepared yellow mustard
- 1/2 tsp salt
- 2 Tbsp vegetable oil
Directions:
- In a medium bowl, coarsely mash the beans.
- Add the cracker meal, green onions, parsley, garlic, soy bacon bits, barbecue sauce and salt.
- Blend well with hands and form into 7-8 patties.
- In a large skillet, heat the oil over medium low.
- Add the patties and cook a few minutes on each side, pressing down a bit with the spatula.
- Patties are done when they are golden brown on both sides and have set up inside.
