If you have a stove top pressure cooker, I think you will enjoy this easy, quick stew. It’s made with the new UnMEAT Luncheon Meat-Free product.
Serves 1-2.
Ingredients:
- 5.5 g UnMEAT meat-free Luncheon Meat-Style (1/6 of can)
- 2 ribs celery, cut in 1-inch pieces
- 1/2 onion, large slices
- 8 baby carrots
- 1 medium potato, peeled, quartered
- 1/2 tsp vegetarian chicken broth mix
- !/2 c water
- dash smoked paprika
- 1 Tbsp butter
Directions:
- Put all ingredients in pressure cooker.
- Cook over medium heat until the valve jiggles.
- Continue cooking 3 minutes.
- Run cold water over the pressure cooker until the pressure is released.
- Open pot and serve. If desired sprinkle with chives or parsley.
