When I am in a hurry and need to put a satisfying meal on the table, here is one of my go-to recipes. It doesn’t get much easier than this! Double or triple for a crowd.
Serves 2.
Ingredients:
- 1 Tbsp butter
- 1 small onion, chopped
- 1-10 oz can (mild or hot) diced tomatoes with green chilies
- 1-13 oz can light coconut milk
- 1-15 oz can red beans, rinsed and drained
- 1/2 tsp curry powder
Directions:
- In a medium skillet or heavy pot on medium low, melt the butter. Add onions and saute a few minutes or until transparent.
- Add tomatoes/chili, coconut milk, and beans. Stir in the curry powder and simmer a few minutes, or until hot. Serve in a bowl with bread on the side, or ladle it over rice.
