Easy Red Bean Curry

Easy Red Bean Curry When I am in a hurry and need to put a satisfying meal on the table, here is one of my go-to recipes. It doesn’t get much easier than this! Double or triple for a crowd.

Serves 2.


  • 1 Tbsp butter
  • 1 small onion, chopped
  • 1-10 oz can (mild or hot) diced tomatoes with green chilies
  • 1-13 oz can light coconut milk
  • 1-15 oz can red beans, rinsed and drained
  • 1/2 tsp curry powder


  1. In a medium skillet or heavy pot on medium low, melt the butter. Add onions and saute a few minutes or until transparent.
  2. Add tomatoes/chili, coconut milk, and beans. Stir in the curry powder and simmer a few minutes, or until hot. Serve in a bowl with bread on the side, or ladle it over rice.
