This is a tangy and creamy dressing that can be made quickly in a kitchen mixer or blender.
Makes about 1 cup.
Ingredients:
- 1 medium avocado, peeled, pitted
- 1/4 c buttermilk
- 1/4 c salad oil
- 2 Tbsp seasoned rice wine vinegar
- 1 Tbsp lemon juice
- 1 Tbsp fresh parsley, minced
- 1 clove garlic, chopped
- 1 tsp prepared Dijon mustard
- 1 tsp dry dill
- 1/2 tsp salt
- 1/8 tsp pepper
Directions:
- Place all ingredients in a blender or kitchen chopper and process until thick and smooth.
- Place in tightly sealed jar or refrigerator container and chill until served on salad or as dip. Use within 3 days.
