Make 1 (9.5-inch) pie.
Ingredients:
- 1 1/3 c granulated sugar
- 1/4 c dark corn syrup
- 1/4 c butter
- 1 Tbsp cold water
- 1 Tbsp corn starch
- 3 eggs
- 1/4 tsp salt
- 1 tsp vanilla extract
- 2 c pecan halves
- 1 (9.5-inch or deep 9-inch) unbaked pie shell
Directions:
- Preheat oven to 350 degrees F.
- In medium pan, combine sugar, dark corn syrup, butter, water, and cornstarch. Stir constantly over medium low heat until bubbly on the edges and thickened. Remove from heat.
- In large bowl, beat eggs with wire whisk until frothy.
- Gradually beat the cooked sugar mixture into the eggs, whisking them together.
- Stir in salt, vanilla, and pecans. Pour mixture into pie shell.
- Place pie on baking sheet to catch any drips. Bake 50 minutes, or until filling is set in center of pie.
- Cool on rack before serving.
