Pleasing Pecan Pie

Make 1 (9.5-inch) pie.

Ingredients:

  • 1 1/3 c granulated sugar
  • 1/4 c dark corn syrup
  • 1/4 c butter
  • 1 Tbsp cold water
  • 1 Tbsp corn starch
  • 3 eggs
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 c pecan halves
  • 1 (9.5-inch or deep 9-inch) unbaked pie shell

Directions:

  1. Preheat oven to 350 degrees F.
  2. In medium pan, combine sugar, dark corn syrup, butter, water, and cornstarch. Stir constantly over medium low heat until bubbly on the edges and thickened. Remove from heat.
  3. In large bowl, beat eggs with wire whisk until frothy.
  4. Gradually beat the cooked sugar mixture into the eggs, whisking them together.
  5. Stir in salt, vanilla, and pecans. Pour mixture into pie shell.
  6. Place pie on baking sheet to catch any drips. Bake 50 minutes, or until filling is set in center of pie.
  7. Cool on rack before serving.
