Pickled Red Onion

Mulling spices include bits of cinnamon sticks, cardamom pods, allspice berries, whole cloves, star anise pods, dried orange peel, and black peppercorns. They add a festive flavor to the mix, but because of their hard texture, they are best placed in an infuser bag or ball.

Makes about 3 1/2 cups.

Ingredients:

  • 1 1/2 c water
  • 1/3 c distilled white vinegar
  • 1 1/2 Tbsp sugar or sugar substitute
  • 1 1/4 tsp salt
  • 2 tsp mulling spices (optional)
  • 2 c thinly sliced red onion (about 2 medium onions)

Directions:

  1. In a medium pot, add water, vinegar, sugar, salt, and red onion.
  2. Place mulling spices in an infuser ball or bag. Add to pot.
  3. Heat on medium setting until simmering. Reduce heat to low and simmer 5 minutes.
  4. Add red onion. Stir and cool to room temperature. Remove infuser bag/ball.
  5. Using a slotted spoon, add solids to a 1 quart jar or refrigerator container. Pour in the pickling liquid. Cover and refrigerate.
  6. Serve on tacos, sandwiches, salads, or as a side relish. Use within 2 weeks.
