Fresh Peach Cobbler

Peaches and Batter

  • 4 c peaches (firm, ripe)
  • 1 Tbsp corn starch
  • 1/3 c water
  • 1 c sugar (divided use)
  • 1 Tbsp butter
  • 1 c all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 c vegetable shortening, melted
  • 1/2 c milk


  • 2 Tbsp sugar
  • 1/2 tsp cinnamon


Peaches and Batter

  1. Peel and slice the peaches. Place them in a medium saucepan.
  2. Add corn starch, water and 1/2 cup of the sugar. Cook over medium heat until thick and bubbly.
  3. Stir in the butter and place the peaches in a greased 8 x 8 inch or 9 x 9 inch baking dish.
  4. Preheat oven to 350 degrees F.
  5. Into a large bowl, sift the remaining 1/2 cup sugar, flour, baking powder, and salt.
  6. Add the melted shortening and milk. Stir until combined.
  7. Spoon batter evenly over the peaches. (May not fully cover the peaches.)

Topping and Baking:

  1. Blend together the sugar and cinnamon.
  2. Sprinkle topping evenly over the top.
  3. Place dish on a baking sheet to catch drips and bake in center oven 30 minutes.
  4. Cool briefly. Serve with whipped cream if desired.
