These no-bake candies are a special treat for that rare occasion. Your guests will never know how easy these are to make!
Makes about 20 truffles.
Ingredients:
- 3/4 c old-fashioned natural peanut butter, well-stirred
- 1/4 c softened butter
- 1 c powdered sugar
- 1/8 tsp salt
- 1 tsp vanilla
- 1/4 c roasted carob powder
- 1/2 c chopped nuts
Directions:
- In a medium bowl, cream the peanut butter and butter, using a wooden spoon or electric mixer.
- Add powdered sugar, salt, vanilla, and carob. Continue to blend and cream the mixture. When well blended, knead until you have a pliable dough.
- Break off small pieces of the dough (about 1 inch in diameter). Roll each between your palms until smooth and round.
- Place the nuts on a plate and roll each truffle in the nuts, pressing them in a bit. Place truffles in a tightly sealed container and refrigerate 3 hours or until firm. (These may also be frozen.) Serve cold.
