Pumpkin Waffles

Pumpkin Waffles I have an old-fashioned cast iron waffle iron that I use on a gas stove. I brush it with melted butter, and I only cook the waffles a minute or so per side. Your waffle iron may be different, so experiment a bit to get the crispy texture you want!

Makes 4 large waffles

Ingredients:

  • 1 c whole wheat pastry flour
  • 3 Tbsp sugar
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • dash salt
  • 1 egg
  • 1 c pumpkin puree
  • 1/2 c buttermilk
  • 2 Tbsp melted butter
  • 1/2 tsp maple extract (or vanilla)

Directions:

  1. In medium bowl, whisk together the flour, sugar, baking powder, baking soda, nutmeg, allspice and salt.
  2. In another bowl, beat the egg lightly. Whisk in the pumpkin, buttermilk, melted butter and maple extract.
  3. Add the wet ingredients to the dry ingredients, and stir briefly until blended. (Batter will be thick.)
  4. Preheat waffle iron and pour in batter, cooking according to manufacturer’s instructions. Serve hot with maple syrup.
