I have an old-fashioned cast iron waffle iron that I use on a gas stove. I brush it with melted butter, and I only cook the waffles a minute or so per side. Your waffle iron may be different, so experiment a bit to get the crispy texture you want!
Makes 4 large waffles
Ingredients:
- 1 c whole wheat pastry flour
- 3 Tbsp sugar
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- dash salt
- 1 egg
- 1 c pumpkin puree
- 1/2 c buttermilk
- 2 Tbsp melted butter
- 1/2 tsp maple extract (or vanilla)
Directions:
- In medium bowl, whisk together the flour, sugar, baking powder, baking soda, nutmeg, allspice and salt.
- In another bowl, beat the egg lightly. Whisk in the pumpkin, buttermilk, melted butter and maple extract.
- Add the wet ingredients to the dry ingredients, and stir briefly until blended. (Batter will be thick.)
- Preheat waffle iron and pour in batter, cooking according to manufacturer’s instructions. Serve hot with maple syrup.
