Tired of the same oatmeal for breakfast? Here is a high fiber, delicious alternative that will carry you pleasantly through the morning.
Serves 2-3.
Ingredients:
- 1 c coarse bulgur #4
- 1/2 c shredded dry coconut
- 1 c coconut milk
- 2 c water
- 1/4 tsp ground cardamom
- 1/8 tsp salt
- 2 Tbsp raw sugar or to taste
- 1 tsp vanilla
Directions:
- In a 2-quart or larger pot, blend the bulgur, coconut, coconut milk, water, cardamom, and salt. Over medium low heat, bring the mixture to a boil.
- Reduce heat to lowest setting, cover, and cook 20 minutes. Remove from heat and stir in the sugar and vanilla. Serve with milk or cream.
