Bulgur and Coconut PorridgeTired of the same oatmeal for breakfast? Here is a high fiber, delicious alternative that will carry you pleasantly through the morning.

Serves 2-3.


  • 1 c coarse bulgur #4
  • 1/2 c shredded dry coconut
  • 1 c coconut milk
  • 2 c water
  • 1/4 tsp ground cardamom
  • 1/8 tsp salt
  • 2 Tbsp raw sugar or to taste
  • 1 tsp vanilla


  1. In a 2-quart or larger pot, blend the bulgur, coconut, coconut milk, water, cardamom, and salt. Over medium low heat, bring the mixture to a boil.
  2. Reduce heat to lowest setting, cover, and cook 20 minutes. Remove from heat and stir in the sugar and vanilla. Serve with milk or cream.
