‘Mushroom Meat’ Turnovers
These savory pastry pockets are loaded with flavor. They are easy to make if you buy frozen puff pastry. I used ready cut puff pastry squares which are in the food section of Mid-Eastern grocery markets…
…but any brand will do. (Just cut the pastry into (9) 5-inch squares.) These turnovers are great for holidays and company, or as an appetizer to a special meal. They are a lovely, flavorful treat!
Makes 9 turnovers.
Ingredients:
Vegetarian ‘Mushroom Meat’:
- 16 oz fresh mushrooms
- 1/2 c chopped onion
- 1 Tbsp vegetable oil
- 2 c shredded pepper jack cheese
- 1/2 tsp coarse black pepper
- salt to taste if needed
- 4 oz vegan ground beef
Other Ingredients:
- 1 package Mid-East Puff Pastry Squares, thawed
- 1 egg, separated
Directions:
- Coarsely chop mushrooms. Place them and the onion in a food processor. Pulse until the mixture looks like a coarse pulp.
- Saute vegetables in oil in a medium-high heat pan until much of the water is cooked off (around 10 minutes).
- Remove from heat and add cheese and pepper; blend. Taste this mixture to determine if salt is needed.
- Incorporate ground beef substitute. Set aside.
- Heat oven to 400 degrees F.
- Beat egg white in small bowl. Beat egg yolk with a teaspoon of water in another bowl.
- Roll pastry squares on a lightly floured surface until they are slightly thinner and about 1/2 inch larger.
- Add about 3-4 tablespoons of filling to center of each pastry square. Spread a line of egg white around pastry borders and fold into a triangle, crimping edges with a fork.
- Place turnovers in an un-greased pan. Brush tops with the egg yolk wash. Prick vent holes in tops with a fork.
- Bake 30-35 minutes, or until golden brown.
