Pesto Sauce with Capers

Pesto Sauce with CapersThis sauce is so very easy to make, and it takes vegetarian sandwiches or pasta dishes to a whole new level!

Makes 1/2 cup.

Ingredients:

  • 2 Tbsp pine nuts, ground
  • 5 Tbsp olive oil
  • 2 Tbsp capers
  • 1 c tightly packed basil leaves
  • 1/3 c grated Parmesan cheese
  • 2 cloves garlic, chopped
  • 1/4 tsp salt

Directions:

  1. Place all ingredients in a food processor or blender and pulse/process until pureed.
  2. Chill until served. Use one tablespoon per sandwich. For a pasta dish, dilute with a tablespoon or two of pasta cooking water before adding to cooked pasta and tossing well.
