Soy Taco Filling

This easy recipe utilizes TVP granules, also known as soy bits/mince. Textured Vegetable Protein is rich in protein. Use this filling for tacos, taco salad, and other Mexican dishes. Soy Taco Filling

Makes about 6 cups

Ingredients:

  • 1 c TVP (textured vegetable protein) dry granules
  • 3/4 c boiling water
  • 1 (28 oz) can diced tomatoes with their juice
  • 1 medium onion, minced
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 2-3 Tbsp mild chili powder
  • 1 tsp ground cumin
  • 1 tsp oregano
  • 1/2 tsp dry cilantro
  • 1/2 tsp salt

Directions:

  1. In a 2-quart or larger heavy pot, soak the TVP in the boiling water 10 minutes, stirring a couple of times.
  2. Place in a fine strainer or cheesecloth lined colander and rinse well. Strain and squeeze nearly dry. Return to pot.
  3. To the pot, add remaining ingredients and stir well. Place on medium heat and bring to a boil.
  4. Reduce heat to lowest setting and partially cover. Simmer 30 minutes, stirring occasionally. When most of the liquid has been absorbed, the filling is done. Use in your favorite recipes.
