Here is a very light, healthy dessert that is easy to prepare and very delicious to eat. It will satisfy your sweet tooth without unnecessary calories.Figgy Baked Apples

Serves 5.

  • 5 medium Golden Delicious apples
  • 1 c dried figs, chopped
  • 2 Tbsp honey
  • 1/4 tsp cinnamon
  • 1/8 tsp salt
  • 2 Tbsp boiling water
  • 1 Tbsp lemon juice

Baking Liquid:

  • 1/4 c boiling water
  • 1 Tbsp lemon juice

  1. Remove the upper third of the apple peel and core each apple without cutting all the way through to the bottom. (A small melon baller works best for this process.)
  2. Find a baking dish that just fits the apples and will not allow them to fall over. ( I used a 10 inch loaf pan for this.)
  3. Preheat the oven to 350 degrees F.
  4. In a medium bowl, mix the figs, honey, cinnamon, salt, the 2 tablespoons boiling water and the 1 tablespoon lemon juice.
  5. Spoon the fig mixture into the centers of the apples. Use your fingers to gently press the filling down and get as much in as possible.
  6. Place the apples in the selected baking dish. Place any leftover filling and its liquid around the sides of the apples.
  7. Combine the "Baking Liquid" ingredients, and pour it in the bottom of the dish.
  8. Cover tightly with tin foil and bake 50-60 minutes or until very tender.
  9. Place apples in small serving bowls and spoon the baking liquid and extra figs on top. Serve hot or cold.
