These KETO friendly treats make great lunch box additions. They are loaded with flavor and packed with protein.
Makes about 12 medium cheese bites.
Ingredients:
- 2 large eggs
- 1 c sharp cheddar cheese, shredded
- 1/2 c almond flour
- 1/4 c Parmesan cheese, grated
- 1/2 tsp baking powder
- 1/2 tsp basil
- 1/2 tsp thyme
- 1/4 tsp red pepper flakes
Directions:
- Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
- In a medium bowl, lightly beat the eggs.
- Add cheddar, almond flour, Parmesan, baking powder, basil, thyme, and red pepper; mix well.
- Drop by level tablespoonfuls on the prepared baking sheet, spacing the bites at least an inch apart.
- Bake 10 minutes, or until the cheese bites are lightly browned.
- Allow to cool in pan at least 5 minutes before transferring to plate. Serve as is, or with marinara sauce/salsa or the side.
