Italian Cheese Bites

These KETO friendly treats make great lunch box additions. They are loaded with flavor and packed with protein.

Makes about 12 medium cheese bites.


  • 2 large eggs
  • 1 c sharp cheddar cheese, shredded
  • 1/2 c almond flour
  • 1/4 c Parmesan cheese, grated
  • 1/2 tsp baking powder
  • 1/2 tsp basil
  • 1/2 tsp thyme
  • 1/4 tsp red pepper flakes


  1. Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
  2. In a medium bowl, lightly beat the eggs.
  3. Add cheddar, almond flour, Parmesan, baking powder, basil, thyme, and red pepper; mix well.
  4. Drop by level tablespoonfuls on the prepared baking sheet, spacing the bites at least an inch apart.
  5. Bake 10 minutes, or until the cheese bites are lightly browned.
  6. Allow to cool in pan at least 5 minutes before transferring to plate. Serve as is, or with marinara sauce/salsa or the side.
