Serves 4.
Ingredients:
- 4 c butternut squash, peeled, cubed
- 3 Tbsp maple syrup or pancake syrup
- 3 Tbsp ketchup
- 1 1/2 Tbsp olive oil
Directions:
- Preheat oven to 400 degrees F and line a 13 x 9 x 2 inch baking dish with parchment paper.
- In a large bowl, blend together the maple syrup, ketchup and olive oil. Add the squash and toss until well-coated. Place the squash in the prepared baking dish in a single layer.
- Bake 25 minutes, or until tender. Serve hot.
