Loma Linda is a company that makes a vegetarian fried chicken called FriChik. Here is a recipe that uses this high protein, delicious meat substitute and is easy to put together for a whole family. Serve it over rice or beside mashed potatoes.
Serves 4,
Ingredients:
- 1 (12.5 oz) can Loma Linda FriChik
- 1/2 c water
- 2 medium carrots, peeled, thinly sliced
- 1 Tbsp butter
- 6 green onions, sliced
- 1 medium bell pepper, cut in strips
- 2 cloves garlic, minced
- 2 Tbsp brown sugar, packed
- 1 Tbsp apple cider vinegar
- 1/2 Tbsp soy sauce
- 1 tsp vegan Worcestershire sauce
- corn starch slurry (1/2 Tbsp cornstarch and 1/4 c water)
Directions:
- Cut each FriChik piece into 4-6 smaller pieces. Reserve gravy. Set aside.
- In a large skillet over medium low heat, melt butter. Add water and carrots; cook 8 minutes, or until water has nearly evaporated.
- Add onions and peppers; saute 3 minutes. Add garlic, saute another minute.
- Stir in FriChik with broth.
- Add brown sugar, vinegar, soy sauce, and Worcestershire sauce.
- Bring to simmer on medium heat. Reduce heat and simmer 5 minutes.
- Add slurry and stir until thickened and simmering.
- Serve over rice or beside mashed potatoes.
