These cheesy bites are great as a snack or lunchbox treat. High in protein and low in carbs, they will surprise you with their great flavor and biscuit-like texture.
Makes about 18 medium-sized bites.
Ingredients:
- 5 oz Mozzarella cheese, shredded
- 2 Tbsp cream cheese
- 3/4 c almond flour
- 1 large egg
- 1 tsp granulated garlic
- 1/2 tsp dry basil
- 1/4 tsp red pepper flakes
- 1/4 tsp salt or salt substitute
Directions:
- Preheat oven to 350 degrees F. Line baking sheet(s) with parchment paper.
- In medium bowl, mix all ingredients together:with a wooden spoon; blend by hand until well-incorporated (Dough will be the consistency of cookie dough.)
- Drop on prepared sheet by heaping teaspoonfuls. Space them at least 1/2 inch apart.
- Bake 12 minutes, or until lightly browned, Transfer to cooling rack. Serve warm or at room temperature. They are good plain or with your favorite dipping sauce.
These are like savory drop biscuits. I’ll be making them again for sure.
