
Makes 8 large burgers.
Ingredients:
- 1 1/2 c cooked black or brown soy beans, drained
- 1 Tbsp crushed garlic
- 1 Tbsp softened butter
- 2 Tbsp chili powder
- 2/3 c onion, finely chopped
- 2/3 c cooked yams, mashed
- 2 c cooked rice
- 2 eggs
- 1/2 tsp black pepper
- 1 Tbsp Jugo or nutritional yeast
- 1 Tbsp vegetarian mushroom bouillon powder
- 1-2 Tbsp vegetable oil
Directions:
- Preheat oven to 350 degrees F and brush a baking sheet with some of the vegetable oil.
- In a large bowl, mash the beans with a potato masher or pastry cutter
- Add garlic, butter, chili powder, onions, yams, rice, eggs pepper, Jugo, and bouillon powder.
- Mix well. Use clean hands to form 8 burgers from the mixture.
- Place burgers on prepared baking sheet and brush tops with remaining vegetable oil.
- Bake 25 minutes, or until firm and crispy outside. Allow to stand 5 minutes before serving.
