Serves 6.
Ingredients:
- 1 c all purpose flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp allspice
- 1/8 tsp nutmeg
- 1/4 tsp salt
- 1/4 c miller’s bran (wheat bran)
- 1/2 c sugar
- 1/4 c margarine
- 1 egg, lightly beaten
- 1 tsp orange zest
- 1/4 c orange juice
- 3/4 c ripe banana, mashed
- 1/2 c walnuts, chopped
- 8 dry figs, minced
Directions:
- Preheat the oven to 350 degrees F. and grease an 8 x 4 x 2 inch loaf pan.
- Into a large mixing bowl, sift together the flour, baking soda, baking powder, cinnamon, ginger, allspice, nutmeg, and salt.
- Blend in the bran.
- In a small mixing bowl, cream the sugar and margarine.
- Add the egg, orange zest, and orange juice.
- Fold in the figs and walnuts.
- Spread in the prepared loaf pan, not going higher than 2/3 full.
- Bake about 55 minutes, or until a toothpick inserted in the center comes out clean.
