This is a rich cake that is perfect for a special occasion.
Makes 9 average servings.
Ingredients:
Cake Batter:
- 3/4 c boiling water
- 1 Tbsp lemon juice
- 1/2 c quick oats
- 4 Tbsp butter, diced
- 1/3 c sugar
- 1 small cinnamon stick
- 1 egg, lightly beaten
- 1/2 tsp vanilla
- 2/3 c all purpose flour
- 1/2 tsp baking soda
- 1/3 c brown sugar
Icing:
- 4 Tbps butter, melted
- 1/3 c brown sugar
- 1 1/2 Tbsp milk
- 1/2 c unsweetened shredded dry coconut
- 1/2 c chopped nuts
- 1/2 tsp vanilla
Directions:
Cake Batter:
- Preheat oven to 350 degrees F and butter an 8 x 8″ baking pan.
- In large bowl, pour boiling water over lemon juice, oatmeal, diced butter, sugar, and cinnamon stick. Stir and let stand 20 minutes.
- Remove cinnamon stick. Add egg and vanilla.
- In mediium bowl, whisk together flour, soda, salt and brown sugar. Add to wet ingredients and stir just until incorporated. Do not overmix.
- Scrape batter into prepared pan. Bake 20 minutes or until a toothpick inserted in the center comes out clean.
Icing and Finishing:
- Mix all icing ingredients together.
- Top warm cake with icing. If desired, place cake under broiler one minute or until topping is lightly browned.
- Cut into 9 square pieces. Serve warm, cold, or at room temperature.
