Oatmeal Bounty Cake


This is a rich cake that is perfect for a special occasion.

Makes 9 average servings.


Cake Batter:

  • 3/4 c boiling water
  • 1 Tbsp lemon juice
  • 1/2 c quick oats
  • 4 Tbsp butter, diced
  • 1/3 c sugar
  • 1 small cinnamon stick
  • 1 egg, lightly beaten
  • 1/2 tsp vanilla
  • 2/3 c all purpose flour
  • 1/2 tsp baking soda
  • 1/3 c brown sugar


  • 4 Tbps butter, melted
  • 1/3 c brown sugar
  • 1 1/2 Tbsp milk
  • 1/2 c unsweetened shredded dry coconut
  • 1/2 c chopped nuts
  • 1/2 tsp vanilla


Cake Batter:

  1. Preheat oven to 350 degrees F and butter an 8 x 8″ baking pan.
  2. In large bowl, pour boiling water over lemon juice, oatmeal, diced butter, sugar, and cinnamon stick. Stir and let stand 20 minutes.
  3. Remove cinnamon stick. Add egg and vanilla.
  4. In mediium bowl, whisk together flour, soda, salt and brown sugar. Add to wet ingredients and stir just until incorporated. Do not overmix.
  5. Scrape batter into prepared pan. Bake 20 minutes or until a toothpick inserted in the center comes out clean.

Icing and Finishing:

  1. Mix all icing ingredients together.
  2. Top warm cake with icing. If desired, place cake under broiler one minute or until topping is lightly browned.
  3. Cut into 9 square pieces. Serve warm, cold, or at room temperature.
