The minced green tomatoes add a nice moist texture to these muffins, as well as a boost of nutrition. Pack these in your children’s lunch boxes. They will love them! Makes 12 medium muffins.
Ingredients:
- 1 egg
- 1/2 c minced green tomatoes
- 1/2 c milk
- 1 1/2 c all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp apple pie spice (*or below)
- 1/3 c sugar
- 1 c chopped nuts
Directions:
- Preheat oven to 350 degrees F, and grease a muffin tin with 12half-cup muffin wells.
- In a large bowl, beat egg lightly. Remove excess liquid from tomatoes by putting them in a strainer or squeezing out much of the juice. Add green tomatoes and milk to the eggs; mix well.
- Sift the flour, baking powder, baking soda and apple pie spice into the green tomato mixture; add the sugar. Stir until combined.
- Fold in the nuts. (Batter will be very stiff.)
- Spoon batter into muffin cups to within 1/4 inch of the rim and bake for 20 minutes, or until a toothpick inserted in the center comes out clean.
- Leave in tin for 5 minutes before loosening edges and transfering to a cooling rack.
- To substitute for apple pie spice, use 1/2 tsp cinnamon, 1/2 tsp allspice, 1/4 tsp nutmeg, 1/4 tsp ginger,1/4 tsp cardamom and 1/8 tsp cloves.
