Serves 4.
Ingredients:
- 1 c chickpeas, cooked and drained
- 1 cucumber
- 1 large tomato
- 6 radishes. sliced
- 1 c cilantro, whole leaves only
- 2 Tbsp capers
- 1 Tbsp lemon juice
- 3 Tbsp sour cream
- dash kosher salt
- Romaine lettuce leaves
Directions:
- In a large bowl, place the chickpeas.
- Peel the cucumber, cut in half lengthwise and remove the seeds.
- Cut into bite-sized pieces and add them to the bowl.
- De-seed the tomato and cut into bite-sized pieces.
- Add them, the radish slices and the cilantro to the bowl.
- In a small bowl, mix the capers, lemon juice and sour cream.
- Add salt and blend well.
- Add this dressing to the salad and toss.
- Add more salt as needed and serve on a bed of Romaine lettuce leaves.
