Chickpea Caper Salad

Serves 4.


  • 1 c chickpeas, cooked and drained
  • 1 cucumber
  • 1 large tomato
  • 6 radishes. sliced
  • 1 c cilantro, whole leaves only
  • 2 Tbsp capers
  • 1 Tbsp lemon juice
  • 3 Tbsp sour cream
  • dash kosher salt
  • Romaine lettuce leaves


  1. In a large bowl, place the chickpeas.
  2. Peel the cucumber, cut in half lengthwise and remove the seeds.
  3. Cut into bite-sized pieces and add them to the bowl.
  4. De-seed the tomato and cut into bite-sized pieces.
  5. Add them, the radish slices and the cilantro to the bowl.
  6. In a small bowl, mix the capers, lemon juice and sour cream.
  7. Add salt and blend well.
  8. Add this dressing to the salad and toss.
  9. Add more salt as needed and serve on a bed of Romaine lettuce leaves.
