Peanut Butter Grits
These grits go well with black-eyed peas, greens and squash, making them the perfect choice for a Southern (American) dinner.
- 1 c yellow corn grits
- 2 c water
- 2 c milk (dairy or vegan)
- 1/4 c peanut butter
- 1/4 c peanuts, shelled
- In a large pot, place the grits, water, milk, and peanut butter. Whisk over medium high heat until the peanut butter is dissolved.
- Reduce heat to low and whisk until bubbling. Continue to whisk over the heat for 5 minutes, or until the desired thickness and texture.
- Spoon into bowls or onto dishes and sprinkle with peanuts. Serve with greens and beans or peas for a savory treat, or serve for breakfast with a drizzle of honey.
