VU Chocolate Chip Cookies

Makes 12 large cookies.


  • 3 Tbsp vegetable shortening
  • 3 Tbsp butter, softened
  • 1/4 c sugar
  • 1/4 c brown sugar, packed
  • 2 Tbsp beaten whole egg (1/2 an egg)
  • 1/2 tsp vanilla
  • 1 c all purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 c walnuts, chopped
  • 3 oz chocolate chips (or chopped milk chocolate bars)


  1. Preheat oven to 375 degrees F and line a large baking sheet with parchment paper.
  2. In medium bowl, soften and blend the shortening and butter.
  3. Add sugar and brown sugar. Cream the mixture.
  4. Sir in egg and vanilla until well-mixed.
  5. Sift in the flour, baking soda and salt. Blend well.
  6. Fold in the walnuts and chocolate chips until evenly dispersed.
  7. Drop dough by tablespoons on the parchment paper, spacing cookies well apart. You should get 12 large cookies.
  8. Bake l minutes, or until golden. Remove to cooling rack. Cool completely before serving.
