This is a luscious, very rich dessert, which is full of good nutrition. Serve in small quantities at the end of a special meal.
Makes 4 small servings.
Ingredients:
- 3 medium apples
- 2 Kiwi fruits
- 1/4 c almond flour
- 1/4 c slivered almonds
- 1/4 c sugar
- 1/4 c shredded unsweetened coconut
- 1 1/2 Tbsp unrefined coconut oil
Directions:
- Preheat oven to 350 degrees F and ready an ungreased 8 x 8 x 2″ baking dish.
- Peel apples, core, and slice. Place them in a large bowl.
- Peel kiwi fruit, remove stem ends, and slice in half-circles. Add to bowl.
- Sprinkle into the bowl the flour, slivered almonds, sugar and coconut. Stir well.
- Spoon mixture into readied baking dish in an even layer. Dot top with coconut oil.
- Bake uncovered 35 minutes. Stir pudding and serve in small bowls. If desired, top with yogurt, whipped cream or sour cream.
