Kiwi Apple Pudding

This is a luscious, very rich dessert, which is full of good nutrition. Serve in small quantities at the end of a special meal.

Makes 4 small servings.


  • 3 medium apples
  • 2 Kiwi fruits
  • 1/4 c almond flour
  • 1/4 c slivered almonds
  • 1/4 c sugar
  • 1/4 c shredded unsweetened coconut
  • 1 1/2 Tbsp unrefined coconut oil


  1. Preheat oven to 350 degrees F and ready an ungreased 8 x 8 x 2″ baking dish.
  2. Peel apples, core, and slice. Place them in a large bowl.
  3. Peel kiwi fruit, remove stem ends, and slice in half-circles. Add to bowl.
  4. Sprinkle into the bowl the flour, slivered almonds, sugar and coconut. Stir well.
  5. Spoon mixture into readied baking dish in an even layer. Dot top with coconut oil.
  6. Bake uncovered 35 minutes. Stir pudding and serve in small bowls. If desired, top with yogurt, whipped cream or sour cream.
