Lemon Tofu

Lemon TofuThis lovely citrus-flavored entree is simple to make, and will please any vegan or vegetarian. It has the added benefit of being low in fat and calories. Serve with rice, or for special occasions, pair it with our Vegetarian Stuffed Grape Leaves (Dolmades).

Serves 4.

  • 12 oz extra firm tofu
  • 4 Tbsp lemon juice, fresh or bottled
  • 1 1/2 tsp vegetarian chicken style broth mix
  • 1 tsp dry basil
  • 1 Tbsp butter

  1. Preheat oven to 350 degrees F and line a large baking sheet with parchment paper.
  2. Rinse and drain the tofu. Pat dry. Slice the block in half and then cut each half into 1/3 inch slices.
  3. In a small bowl, whisk together the lemon juice and broth mix until well blended. Dip each slice of tofu in the seasoned juice, turning to cover all sides. Place on the lined baking sheet. Pour any remaining lemon juice evenly over the top of the slices.
  4. Using fingers, sprinkle the basil evenly on the tofu. Dot each slice with butter and bake 30-40 minutes or until golden. Serve hot or cold.
